When you'd hear it

에서 is neutral and extremely common in both conversation and writing. Learners encounter it with places where activities happen, such as studying at school, eating at a restaurant, or working at an office.

What learners get wrong

For an action, 에서 marks the place where it happens, while 에 commonly marks a static location: 자습실에서 공부하다 versus 자습실에 있다. In 서울에서 멀다, 에서 has a different source-related use, so that sentence is not an action-place example.
